Lots of people rave about red velvet cakes or cupcakes with cream cheese frosting, and some don’t see what the big deal is and I am not too sure either!
I get that the red food coloring and white frosting gives the cupcake a clean, new look, but essentially, it’s just chocolate cake dyed red!
While the cream cheese frosting was tasty, it was wasn’t thick enough to pipe properly. So even though the recipe calls for 2 cups of powdered sugar, I added much more to get the frosting thicker. For this the best thing to do is just keep adding until you get the consistency you are looking for, to pipe and keep its shape!
