Being a HUGE chocolate lover it was difficult to find the RIGHT cookie recipe that is bound to turn out great each time and also be very soft and chewy. After lots of searching I finally came across this “White Chocolate Macadamia Nut Cookies” recipe. At the moment I didn’t have any macadamia nuts so I chose to bake the cookies with white chocolate only! And they were delicious… it was hard to eat just 1.
The secret to staying soft and chewy definitely has to do with only keeping them in the oven for 9 minutes. Even if they look uncooked once they are out the oven they still cook for a while as they cool! If you are a fan of a more crunchy cookie just keep them in longer. Or there are other alternatives such as adding more of one ingredient over another to get a crispier cookie.
Another thing that makes it so delicious is good quality chocolate. I used 2 (3.5 oz) bars of Lindt white chocolate, chopped into small pieces… YUMM!
