Cinnamon Roll Cupcakes!

Not everyone is a huge fan of cinnamon, but I love me a nice warm cinnabon with icing drizzled all over the top… YUMMM! We woman have those times were we crave certain things and for me its usually sweets. You just need a little something to satisfy that craving so this recipe is perfect. It makes 12 cupcakes which is great because its not too much and not too little :).

Tripple Chocolate Loaf Cake

For the past year or year and a half I have been absolutely obsessed with watching certain YouTubers. I have come across some that I literally do not go a day or week without watching! One YouTuber in particular who’s name is Tanya Burr, makes baking videos and also has her own book that is now out called Tanya Bakes.

Me being the chocolate lover that I am, I absolutely had to make this delicious cake. The cake is super moist and the chunks of chocolate add such a great touch to it. So lets get right into it :)!

Note: I did not have castor sugar, and if you don’t either no need to worry. What you can do is take granulated sugar and pulse-blend it until the texture is superfine.  You can use either a magic bullet ( this is what I did ) or you can use a hand mixer. Just make sure not to over blend.

What you will need:

1 Loaf tin

1 cup unsalted butter

200g (7/8 cups) of castor sugar4 eggs

1 1/2 tsp baking powder

150g (1 cup) of self raising flour

60g (1/2 cup) of cocoa powder

100g of white chocolate

100g of milk chocolate

100g of caramilk chocolate

 

Directions:

1. Preheat oven to 350 degrees

2. Cream together butter and sugar till light and fluffy

3. Put in the 4 eggs and you can add vanilla if you’d like

4. Add in baking powder then gradually add in the flower

5. Add in the cocoa powder

6. Fold in the chocolate chunks

7. Cook for 40 minutes. Depending on your oven you may need more or less time. So make      sure to check around 35 minutes!

8. Drizzle remainder of white chocolate

Caramel & Swirled White and Milk Chocolate Chip Cookies!

Hi everyone!! Today’s post is yet another cookie recipe :D. I’m clearly always on the search for great cookie recipes! There just quick and easy to make and they make for great snacks when you’re on the go or when you need to satisfy that little craving of yours :)! The recipe can be found here. Hope you guys enjoy making these as well, but be careful because it’s hard to just eat one ahaha!

Note: I decided to not add the chopped pecans, and I used swirled white and milk chocolate chips instead of white chocolate chips. So you can always play around and add to your own preference.

Soft Brown Sugar Cinnamon Cookies!

And I’m back again with another cookie recipe… what can I say I love soft chewy cookies ahaha. I waited all week to make these until I went into my pantry and realized I didn’t have anymore brown sugar. I was determined to make these, and I had a craving for something sweet! So… google to the rescue of course. Keep reading to see how I made this recipe work.

If you’re out of brown sugar, you can substitute it with regular sugar and add 2 tablespoons of molasses for each cup of sugar. The reason for adding the molasses is because regular sugar will make your cookies crispy. If you like your cookies more on the crispy side then you can simply just use regular sugar. Of course I did not have molasses! But hey any baker needs to learn to improvise at some point and thats how great recipes are made. If you don’t have molasses you can substitute it for maple syrup.

A little side not for what I did:

1 1/3 cup sugar mixed with 2 1/2 tablespoons of maple syrup.

Chocolate Cupcakes & Buttercream Frosting!

As you can see I’ve sort of taken a break from obsessing over cookies and now I’m on to cupcakes ahaha. I searched so long to find a great chocolate cupcake recipe that was moist and simply delicious. I finally came across one, while also adding a few things of my own with the help of my grandmother! So lets get right into it.

Cupcake recipe found here. It says to use 1/2 cup plus 1 tablespoon hot water, instead I did 1/2 cup hot water and 2/4 tsp of instant coffee mixed with the  1 Tablespoon of hot water. It really was not a lot but I chose to add it in, you can definitely add more if you’d like. I also added 1/3 cup of plain vanilla yogourt.

As for the frosting I used the same recipe I used for my last cupcake recipe because it turned out so great. When I find something that works well I like to stick with it for a while until I really have the time to experiment a little bit more. The recipe for the buttercream frosting can be found here.

Vanilla Cupcakes with Buttercream Frosting!

For this weeks post I bring to you a nice moist vanilla cupcake with a delicious buttercream frosting! I always struggled with getting the right consistency when frosting my cupcakes and I finally got it this time… lets just say I’m extremely proud of myself :$. This is a very easy recipe which can be found here. What I liked about is the fact that it was quick and did not require much time to make, the frosting as well took very little time.

Another reason why I love making cupcakes so much is because you can have as much fun as you want with them. Getting creative and decorating is ALWAYS my favourite part :D. So I decided to crush some Oreo thins and sprinkle them over the frosting while adding a piece of Hershey Cookies ‘n’ Cream on it!

Note: In the recipe for the frosting where it says 2-4 Tablespoons of milk, I actually used 1 Tablespoon of Milk and 1 Tablespoon of Whipping cream.

Crepes Anyone?

So this is not a baked goods post, but I still consider crepes to be a dessert! Lately i have been craving them, so I decided for breakfast why not look up a quick and easy recipe. Thats exactly what I did and I whipped a few. What I also love about crepes is that you can dress them up however you like. In the pictures that will be show below I simply just sprinkled some icing sugar. But you can easily cut up some fruits, add nutella or whichever chocolate you like, whip cream, maple strop. Honestly, the list can go on :). Below is the link to the recipe!

Easter Cookie Baskets!

Once again I have another Easter dessert to share with you all :D. Whenever I am anxious, stressed or overwhelmed I resort to baking, because for me it’s a great therapy that helps me relax! So lets get right into it.

Cookie Recipe can be found here, it is a very easy recipe and it’s great because it doesn’t take very long to prepare!!

I decided to take the cookie dough and place them into a mini cupcake pan, while pressing down to make a shape of a little cookie cup. Once they are done baking around 9-10 minutes, I let them cool and then you can go crazy and fill them with whatever you like. I decided to fill some with the coconut filling that I had posted in my previous Easter dessert and you can find the ingredients/ directions here, I decided to garnish it with some chopped almonds and places a cadbury mini egg in the middle. Then the other cookie cups were filled with whipped cream and strawberries.

Easter Brownie Bites!

With Easter around the corner, I’ve decided to make some fun and tasty treats! This recipe was super simple and obviously very tasty, but I must say it was pretty decadent. So lets get right into it!

Brownie Recipe

1 cup white sugar

1/2 cup butter

2 eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

Preheat oven to 350 degrees F. Then cream together the butter and sugar, add the 2 eggs and vanilla. In a separate bowl mix together the cocoa powder, flour, salt and baking powder. Slowly mix in the dry ingredients with the wet ingredients. These were baked using a mini cupcake pan, bake for 25-30 minutes!

Coconut Filling Recipe:

1/4 cup brown sugar

1/4 cup white sugar

1/4 cup butter

1/2 tsp vanilla

6 TBS of evaporated milk

1/2 cup or more of coconut shreds

Optional: you can add any type of nuts you prefer!

“In a medium saucepan, mix together the first 5 ingredients. Make sure to stir  constantly over medium heat until it comes to a slow boil. Cook, stirring constantly until it thickens – this will take about 10 minutes. Remove saucepan from heat and stir in coconut and pecans. Allow frosting to cool. Place a spoonful of cooled coconut frosting on each brownie bite. Add 2 cadbury mini eggs to each brownie bite nest.”

Quick & Easy Banana Muffin Recipe!

When cravings quick in, I don’t know about you guys and girls but I browse and browse until I can find a quick and easy recipe to make! So, for this post I will share with you a quick recipe to follow. I had a ripe banana left over and I was like hey, why not make some banana muffins! So lets get into it.

This recipe yields 6 little muffins, and takes about 35 minutes to put together, 15 minutes of prep time and cook  time is 20 minutes!

Ingredients:

  • 1/4 cup of butter, softened
  • 1/4 cup of sugar
  • 1 egg
  • splash of vanilla
  • 1 ripe banana, mashed
  • 1/2 cup flour
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda

Directions

  1. Cream together the butter and sugar, add your one egg and then a splash of vanilla.
  2. Mash the banana then add it to the mixture of butter, sugar, egg and vanilla.
  3. In a separate bowl mix together the flour, baking powder and baking soda.
  4. Mix together the dry ingredients with the wet ingredients.
  5. Place linings in a muffin pan and separate them evenly.

Voila! it’s as simple as that!
